North Carolina Barbecue is a soul food of North Carolina, United States and featured in the following videos.

There are three types of North Carolina Barbecue, each of which is described below.

  • Eastern Style
  • Western Style (Piedmont Style, Lexington Style)
  • Pork Ribs

Eastern Style

Eastern Style Barbecue is made with the whole pig and is said to "use every part of the pig except the squeaker".

Eastern Style Sauces are vinegar- and pepper-based and do not contain any tomatoes.

Eastern Sauce is used primarily as a seasoning after cooking (although it is sometimes used as a mop sauce (BBQ sauce) while the pork is cooking).

Eastern Style Coleslaw (a type of finely chopped cabbage salad) almost always uses mayonnaise (or whipped salad dressing).

Western Style (Piedmont Style, Lexington Style)

Western Style (Piedmont Style, Lexington Style) Barbecue utilizes a red sauce or "dip" made from vinegar, tomatoes, and usually red pepper flakes and other spices depending on the recipe.

Western Style Barbecue is most common in the central and western Piedmont Plateau of North Carolina and utilizes only the shoulder of the pig.

As with other styles of barbecue, recipes vary and can include many different ingredients, ranging from slightly sweet to hot and spicy.

The sauce is also used as a condiment base for "red slaw" (also called "barbecue slaw"), a coleslaw made with Lexington Style barbecue sauce instead of mayonnaise.

Hush puppies (savory cornmeal-based dough balls rolled into small pieces and fried in oil) are usually served with pork shoulder and slaw.

Pork Ribs

Pork Ribs are the North Carolina Barbecue alternative to Eastern or Western Style.

Pork Ribs are served at various festivals and annual competitions, such as the Twin City RibFest in Winston-Salem.

Baby back ribs, sometimes called upper loin ribs, are short, juicy, well-marbled ribs cut from the center of the loin.

Spare ribs are cut from the lower part of the rib cage (the sides and top of the belly of the pig) and are not as tender as baby backs, but are thicker, longer, and more flavorful.
